This coffee is an unfolding journey, as a round, chocolatey aroma leads right into the cup. As it cools, the sweet green-apple acidity is balanced by caramel toffee, and a cream soda finish emerges, creating a cozy cup loaded with sweet flavors.

About Victor Calderon of Guatemala
Finca El Tambor (The Drum) gets its name from the 28 springs on the property that in the past set up an underground rumble much like drums. Victor Calderon, a fifth-generation coffee grower, sold his house and car to buy the farm in 2001. With hard work and a good team, the farm has come alive again. Eight families live and work on site, as well as the farm manager. Victor gives 10% of the land for the families to grow produce for food, each is given a horse for transportation and hauling the day’s coffee harvest to the wet mill for processing.
Though the underground drums no longer pound, the springs provide all the water for the farm’s production. Sustainability is a priority for Victor, and except for fertilizers used in the coffee nursery, all other farming practices at El Tambor are organic. Victor is combatting Coffee Rust with a by-product of the mining operation of earlier days, Bentonite clay, and finding good success without endangering the health of his workers, plantings, or land.
Dapper & Wise
In 2013, Insomnia's owners Evan Aldrete and Tyler Geel launched Dapper & Wise as a tasting room and roasting facility in Portland's Western suburbs, and by 2014, as a wholesaler as well.
Based out of Hillsboro, Oregon, Evan and Tyler work with a stellar team, all of whom are dedicated to the values that undergird Dapper & Wise: “We want people to walk through our doors and feel welcome. We want people to taste our coffee and be impressed and inspired. We want the coffee we roast to exemplify the hard work of the producers that grow it.”
