About Smallholder producers of Indonesia
South of Lake Toba in Sumatra is the Lintong region, where coffee was first cultivated courtesy of the Dutch bringing it into the area in the middle of the 1800s. “Batak” refers to the Batak people who live around Lake Toba. Their farms are small, hilly, and high in altitude, with rich soil and plenty of rainfall. "Nauli" means "pretty." This lot was grown by a group of 51 smallholders, all of whom are women, including their leader, Kotor.
As is traditional with Sumatran coffees, smallholder growers pick their coffee cherries by hand, wet-hull them (remove the skins immediately), then partially dry the beans in greenhouses on cement until they reach about 40-50% humidity. At this point, they are sold at the local market to a coffee processor who dries it to 25-25% humidity before stripping off parchment and further drying. This “Gilling Basah” method produces a beautiful dark opal-green coffee with little silverskin.
