Rich fig, dark chocolate, and malt aromas juxtaposed with juicy, full body and key lime acidity set this Sumatran offering solidly in the specialty category. Deep cacao, cherry juice, a hint of tobacco, and fruit leather are just some of the presenting flavors. Brown sugary-sweet, the cup finishes with cooling aromatic cedar note.

About Smallholder producers of Indonesia
Silimakuta is a small community in the Lake Toba region of Sumatra and the first village to work directly with PT’s importer, Crop to Cup. Helena is the local collector, traveling around the community gathering the coffee cherries from all the neighboring farms. She sorts the coffee cherries for quality of ripeness, then pulps the coffee on the spot before taking the parchment to the local stream for washing. Here she uses flotation to further separate the highest quality coffee from the rest.
The coffee is milled at this point when the moisture content is still high. Known as Giling Basah, or the Wet-Hulled Method, this is the traditional milling process found in Sumatra. Once the coffee is dried to a certain moisture level, it is sent off to the nearby city of Medan where it is further dried, milled again, then hand-sorted twice to ensure that the coffee is the finest Sumatra has to offer.

Topeka Kansas, 1993: an unlikely place and time for one of the most groundbreaking Direct Trade coffee companies in the world to be founded, but that's just what Fred Polzin and Jeff Taylor did. PT's Coffee Roasting Co.'s slogan is, "Without the love, it's just coffee.", and they certainly live up to it. (In fact, Jeff married a Colombian coffee pro, Maritza, now Director of Quality Control for PT's).
PT's Coffee Roasting Co. has won many awards, including Roast Magazine's 2009 "Roaster of the Year" and a 2012 Good Food Award medal. Building on a history so solid, PT's is pushing into the future of the coffee industry with promise and momentum.
