Coffee Description

Villa Sarchi is one of a handful of varieties grown and processed by Allan. The variety is a natural mutation of the Bourbon variety that was discovered about 10 miles from where Allan grows coffee today and is not commonly grown outside of Costa Rica. This Villa Sarchi from Don Joel is a honey processed lot. This means that after the skin and pulp of the coffee cherry are removed by mechanical depulping, some mucilage is left on the bean. It maintains a rich golden color on the drying table.

About Don Joel of Costa Rica

Located in the scenic West Valley region of Costa Rica, the Don Joel farm spans just 12 hectares. Despite its modest size, it yields an impressive 350 fanegas (a Costa Rican term to measure weight of coffee harvested) per harvest, boasting its very own washing mill. Allan Oviedo has been the proud owner of Don Joel for a decade now, and manages farm operations together with his son Ignacio. Among ten siblings, Allan is one of five involved in the coffee industry. One of his brothers owns the neighboring farm and supplies specialty coffee to the Don Joel wet mill for processing.

Ruby Coffee Roasters

After years of leading the roasting and coffee sourcing programs of other notable roasters, Jared and Deanna Linzmeier moved back to Jared's hometown of Nelsonville, Wisconsin to build their own roastery. Because doing something great doesn't always mean doing something large, Ruby has opted to partner with small farms, small exporters and create small coffee bars, allowing them to have a much greater impact on the economic, environmental, social sustainability of specialty coffee.

This perspective has propelled a roasting operation, which began in a spare workshop room at Jared's childhood home, to being named Best Coffee in Wisconsin by Food and Wine two years in a row. Accolade aside, Ruby's real goal is a simple one: to source phenomenal quality coffee and make it approachable to everyone.
