Coffee Description

Leandra grows bourbon coffee trees, a popular specialty variety often grown in southern Peru, known for vibrant sweetness and complexity. The ripe cherries are depulped and fermented 36-46 hours in cement tanks before being fully washed, then the washed beans are left to dry on raised beds for 15-20 days. This delicious coffee offers notes of milk chocolate, hazelnut, dark cherry, and baking spice!

About Leandra Montalvo Bedoya of Peru

The department of Cusco in Peru is full of natural beauty and powerful Incan history and culture. The region is where the high mountain peaks of the Andes transition to the forests of the Peruvian Amazon. Yanatile is located here, in the remote eastern edge of the department. Valle Inca is a cooperative that supports smallholder growers in Peru and works with the smallholders in remote Yanatile and throughout the region. These small farms nestled in the forested foothills average only 2-3 hectares each, or around 5-7 acres.

Ruby Coffee Roasters

After years of leading the roasting and coffee sourcing programs of other notable roasters, Jared and Deanna Linzmeier moved back to Jared's hometown of Nelsonville, Wisconsin to build their own roastery. Because doing something great doesn't always mean doing something large, Ruby has opted to partner with small farms, small exporters and create small coffee bars, allowing them to have a much greater impact on the economic, environmental, social sustainability of specialty coffee.

This perspective has propelled a roasting operation, which began in a spare workshop room at Jared's childhood home, to being named Best Coffee in Wisconsin by Food and Wine two years in a row. Accolade aside, Ruby's real goal is a simple one: to source phenomenal quality coffee and make it approachable to everyone.
