About Huila Decaf of Colombia
This decaf coffee comes from the producers of ASOMUJER (Asociación de Campesinas del Sur del Huila), an association of women farmers located in the Timaná municipality in the south of the Huila department. The group was founded in 2007 by 10 women who were looking for new or alternative ways of doing business and to earn more for their products and hard work. Today, ASOMUJER is made up of 75 women producers, including activists, single mothers, and those displaced by conflict in areas of Colombia.
After milling, this lot was decaffeinated with the sugar cane process as the Descafecol facility in the Andean region of Colombia. This process uses the naturally occurring compound ethyl acetate, which binds with caffeine molecules during a gentle soaking process. While the caffeine content gets washed away, this method leaves the inherent characteristics of the coffee intact.
