Coffee Description
The Pink Bourbon variety has become one of our favorites in recent years, as it seems to consistently yield coffees that are fruity, layered and complex. This lot from Ciro Valencia’s farm El Roble in San Agustín, Huila is an exceptionally clean and vibrant example of the variety with notes of tropical fruit and red berries with a soft and sweet finish.

About Ciro Valencia of Colombia
Ciro Valencia began working in coffee in the early 1980s, learning the fundamentals of farming from his father before inheriting Finca El Roble in 1990. For a long time, Ciro continued to sell his coffee through a local cooperative as his father had done, but the prices he received were never truly sustainable. Inspired by Colombia’s first Cup of Excellence competition in 2005, Ciro became determined to produce higher quality lots that he could sell for a better price. Part of his strategy was to replant much of his two hectare farm with varieties known for their high cup quality: he now cultivates 5,000 Pink Bourbon trees and 3,500 Gesha trees.
The other factor in Ciro’s success is his meticulous processing, which always begins with the selective harvesting of ripe fruit. This coffee is floated in water to remove any defects and is then fermented in plastic barrels for 40 hours. After pulping, the coffee undergoes a second fermentation in tanks for 60 hours before being washed and dried under shade for 15-20 days.
