About Banko Chelchele of Ethiopia

Banko Chelchele is comprised of coffee harvested by smallholder producers in the Gedeb community of southern Ethiopia. Many of these farmers cultivate coffee in small gardens and backyards and the annual harvest is a communal effort with families and neighbors coming together to pick ripe coffee fruit by hand and deliver it to the nearby washing station for further processing.

This particular lot underwent a method known as honey process, whereby the coffee fruit is pulped in such a way as to remove the outer skin and leave a specified amount of a sticky, pectin-like material known as mucilage surrounding the seed, after which the seeds are dried on raised beds. The honey process is known for yielding fruity, complex flavor profiles with dense sweetness.
