About The Producers of Colombia
Bucaramanga coffee is grown through the Santander Department, which is widely known for its natural, shade-grown coffees. These beans are cultivated in rich forests where volcanic soils are ideal for growing specialty-grade Arabica. The beans are handpicked, washed, and milled by the Northeastern Colombian Coffee Cooperative (Cooperativa Cafetera Del Nororiente Colombiano).
Sul de Minas (also known as South of Minas) has a high altitude, averaging 950m, and a mild annual temperature. It also produces approximately 30% of the country’s coffee, mostly on small farms ranging from 10 to 100 hectares. As for the flavor profile, you’ll typically find that coffee from here is full-bodied with slightly citric notes and fruity aromas.
Huehuetenango is way out there and one of the most remote regions Guatemala has to offer. It’s also one of the country’s few regions that don’t have a volcano. This region is also the highest in the country and is the driest because of the hot winds that blow up from the valley under it, drying everything out. The region is also protected from the frost that would normally kill coffee crops, ensuring they thrive and grow well in the mineral-rich soil.
Our Ethiopian component comes to us from the Buku washing station. It is named for the kebele, or village, where the coffee is harvested. The growers from the surrounding community bring their cherries to this washing station at METAD’s 200 hectare farm in Hambela for further processing.

Coffee Manufactory
Coffee Manufactory is a team of people who want to bring customers closer to farms, farms closer to roasters, roasters closer to baristas, and back again. Back to great farming relationships. Back to being good. Balanced. Clean. We started as a very small team with over two decades of green coffee supply chain experience. Joining with our friends Tartine Bakery who share our philosophy towards sustainable sourcing and most importantly doing things on a human scale.
We are working to create a new paradigm for the specialty coffee roasting industry. One where exceptional coffees are developed through extraordinary relationships. Where our buying practices are based on partnerships and collaborations and not traditional vendor relationships.
