Coffee Description
This microlot is 100% Caturra, a varietal that originated in Minas Gerais, Brazil. A natural mutation of Red Bourbon, Caturra produces more coffee and is more resistant to plant diseases than Bourbon.
For this coffee Andres and his team picked cherries following a strict ripeness criteria. This coffee was exposed to a 42 hours lactic fermentation. For lactic fermentation to take place, the cherries were placed inside plastic tanks for 42 hours at 22 degrees celsius. In this environment, bacteria feeds from carbohydrates and sugars from the mucilage. This leads to a higher concentration of lactic acid.
