Coffee Description
This caturra varietal from the Tico Pepe microlot gets its name from guava trees found in the region that contribute a distinct note to the coffee’s flavor profile. After undergoing 44 hours of anaerobic fermentation in stainless steel tanks, it is intermittently sun dried for 30 days and then stored for 2 months in grain pro for optimum maturation.

About Elias and Shady Bayter of Colombia
This is the second coffee we’ve purchased from Shady Bayter’s estate project, El Vergel. The farm is located in the mountainous department of Tolima and benefits from the nutrient-rich soil of the inactive volcano it sits upon. Managed by himself, his brother, Elias, and their mother, Marta, El Vergel has become known as one of the biggest producers in the region since its beginnings in 1995.
