Coffee Description

We were lucky enough to purchase the entire harvest of this beautifully refreshing and juicy coffee from Jayro. Placed on raised beds strategically placed in the path of excellent sun and dry winds from the Pirris River Valley, this coffee is dried in the cherry for a total of 24 days. The coffee is only moved 3 times in the first 2 days in order to encourage slight fermentation for acidity and sweetness. For the remaining drying period, it’s turned once every hour, resulting in a clean and consistent cup.

About Jayro Mora of Costa Rica

Jayro Mora spent his childhood on the farms of his grandfather, who began farming coffee over 80 years ago. A love of working in nature and fascination with the germination of coffee led Jayro to continue in his grandfather’s footsteps with the purchase of his own farm, El Trapiche. Jayro proudly grows his varieties from seed and provides a reliable source of young plants for neighboring farms. Sustainable farming practices are a priority at El Trapiche, and they have been rewarded for those efforts with a certification by the Rainforest Alliance for the farm’s protected areas.

The dream of long-time coffee professional, Alex Medina, Junto opened its doors in February of 2019. We’re a minority owned company that focuses on both providing intentionally sourced, exceptional products and working with importers and exporters that pay producers a premium for their coffees.
