Coffee cherries are harvested when ripe, then disinfected with ozone and transferred to fermentation tanks. The anaerobic fermentation process is carried out for 48hrs submerged in water. Next, the coffee is pulped and demucilaged - the mucilage and pulp are taken to the pilot plant to carry out the production of process specific yeast culture. This culture medium is then added to the fermentation tanks together with pulped coffee, where they undergo a 24hr aerobic fermentation. Once complete, a thermal shock process is carried out to stop the fermentation process. The coffee is then dried in a dehumidifier to remove moisture, thus preserving the coffee’s delicate notes, preventing over-oxidation of the coffee bean, and halting metabolic processes to mitigate over-fermentation.

Our founder’s experience in coffee importing has compounded our understanding of the importance of building long-term relationships with producers to guarantee our continued support and ambassadorship of their coffee.
