About Heartstrings Organic Blend

Heartstrings reminds us why we fell in love with coffee in the first place. Always featuring coffees from the homeland of all coffee, Ethiopia, Heartstrings is a rich blend of washed & naturally processed coffees. With a deep, intricate complexity and a jammy, strawberry splash, this one’s for the discerning and the curious.
When we first started playing around with this blend, we set our sights on creating something that would savor all the best aspects of a fruity natural, while still delivering the balance and reliability of something more traditional. Unlike washed coffees, where the flesh of the coffee cherry is removed before the bean is dried, naturally processed coffees are dried with the ripe red coffee cherries left intact, baking in those rich, fruity flavors. Paired with a washed coffee roasted to a sweet and cozy depth, the result is a wonderfully layered but slightly elusive flavor profile we can’t get enough of.
For those whose morning cup has become a little humdrum, this one is sure to tug at your heartstrings and spark some new coffee passions. Pull it as a shot. Brew it up however you like. Let the intrigue begin.

A Good Food award-winning roaster and licensed Q Grader, Michael McIntyre specializes in sourcing and quality control in green coffee and in roasting training and analysis. He spends months of the year in Ethiopia sourcing the next year's coffee offerings for importing company Catalyst Trade, which he co-founded. Back in Portland, he spends endless hours on the phone helping roasters find their coffee unicorns, consulting with clients on a wide range of coffee topics, and training coffee professionals in roasting, cupping, sourcing, and quality control. With fifteen years experience in the coffee industry, Michael is relentlessly romanced by coffee and the community it facilitates. Outside of coffee, he is a musician with a love for vintage amps and an addiction to trolling Craigslist ads for antique coffee gear.

At Wonderstate, our passion for exceptional beans and (some might say) obsession with terroir––the way the land speaks through a coffee––is matched by our passion and unwavering dedication to our community of farmers and farmer cooperatives. From leading the industry in fair compensation for farmers, to supporting resilient agriculture and innovative ways of doing business, we’re working to do our part.

And that isn't just talk. In 2015, we became one of the first 100% solar powered coffee roasteries in the world. And in 2017, we announced the highest published minimum price guarantee to farmers, more than 80% above the Fair Trade conventional minimum price and over 50% higher than Fair Trade organic prices.

Our roastery is tucked amidst the rolling hills and valleys of the Driftless Region, a rare topographic wonder in the Midwest. Our founders, Denise & TJ Semanchin and Caleb Nicholes, were both drawn to this small community of 4,000 to set roots and raise their families. We may have outgrown the old train depot where we first roasted our beans, but we’re still as committed as ever to the communities that make our work possible.

The farmers who cultivate and harvest our coffee may feel seemingly distant from this place. But, like them, we also live surrounded by fields and growing crops. Where the stars blink bright and the rivers cut oxbows. From our hometown of Viroqua, to the rural communities where our coffee farmers live and work, to the vibrant neighborhoods our Wonderstate cafes call home across the state, honoring a connection to place and to the people that define it is at the heart of what we do.
