About Mary Rubi Pantoja of Colombia
Mary Rubi Pantoja is a smiling, hard-working lady. Her farm, Toldo Pamba, nestles high in the mountains of southern Colombia near the little town of Buesaco, not far from Ecuador's northern border. Currently, she has 1.5 hectares under cultivation. This means that approximately 5000 coffee trees receive her careful and constant care.
Mary belongs to the Alianza Café Cooperative, a group of small farmers like herself who have banded together to produce some beautiful specialty microlots. By incorporating innovative ideas and adopting new processing practices, Alianza’s members are becoming known for their unique, complex coffees. Mary Rubi takes her coffees through an 18-hour fermentation process to remove fruity residue (mucilage) from the beans, then dries them on patios on site at Finca Toldo Pamba.
