About Bayardo Reyes, Finca San Jose de Las Nubes of Nicaragua

This marks our eighth year of collaboration with Bayardo Reyes, a period during which he has gradually expanded his cultivation to include more prestigious coffee varieties. Among these is the Maragogype, transplanted from his family's original farm, which was lost during the Nicaraguan Revolution.

Last year, we had the privilege of offering coffee from these trees, processed using the traditional washed method. The coffee's exceptional flavor profile and potential prompted us to suggest that Bayardo experiment with natural processing methods. Drawing on his experience with anaerobic processing techniques developed over recent years for his larger natural lots, Bayardo applied his expertise to a small-scale experiment with 60 pounds of Maragogype fruit.

The results were remarkable. The natural process beautifully complemented the variety's inherent tropical and bright fruit characteristics. The flavor profile is characterized by intense notes of watermelon, floral, lemongrass, and red apple. This coffee exemplifies how thoughtful processing can enhance a variety's complexity and focus its flavors.

Over the years, Bayardo has successfully increased the volume of this particular lot, allowing us to now offer it as a full production coffee! We are thrilled to share this unique and expressive coffee with a wider audience, showcasing the intersection of varietal characteristics, processing innovation, and a producer's expertise.

When brothers-in-law Steve Hall and Jeff Johnson founded Tinker Coffee Co., they had a simple plan: bring the specialty coffee scene to their own Indianapolis, Indiana backyard. Combining backgrounds in wine and tech (Jeff worked with IBM for 10 years) with a dedication to sourcing fantastic coffees and sharing the excitement with customers, Tinker Coffee was named "Best Coffee in Indiana" by Food & Wine, so their hard work is paying off!

Tinker Coffee was founded in 2014 and roasts coffee for a sweet group of restaurants, cafes, offices, and markets. Jeff admits to preferring Colombian coffees, and Steve, Kenyas.
