Coffee Description
The dynamic flavors in this coffee can be attributed to passionate care for the coffee plants in cultivating and harvesting in addition to a willingness to experiment by the D'Barbosa farms. The first deep aroma of the coffee is that of creamy, nutty, caramelized sugar and red wine. The subtle strawberry acidity pairs nicely with the chocolate-laced body. You can taste the fermentation in a wine and kombucha-like effervescence.

While Brazil is far and away the largest producer of coffee worldwide, not all coffee leaving the country is commodity grade. In spite of growing pressure to produce larger and larger lots at lower prices, there are still many farmers that are intensely focused on sustainable and ethical practices and dedicated to producing world-class specialty coffee.
Danilo’s farm has been in his family for several generations, and we’ve been incredibly impressed by his commitment to quality and willingness to experiment. After the ripe coffee cherries are picked, the fruit is separated and placed into containers where they ferment for nearly 36 hours before being depulped and set out to dry. This highly controlled fermentation process allows the sugars within the coffee cherry to develop a unique strawberry-like fruit character, which complements the classic peanut butter structure of coffees from Minas Gerais. The flavor profile of this coffee is a perfect fit for drip coffee makers or with an Aeropress for a more full-bodied expression.

When brothers-in-law Steve Hall and Jeff Johnson founded Tinker Coffee Co., they had a simple plan: bring the specialty coffee scene to their own Indianapolis, Indiana backyard. Combining backgrounds in wine and tech (Jeff worked with IBM for 10 years) with a dedication to sourcing fantastic coffees and sharing the excitement with customers, Tinker Coffee was named "Best Coffee in Indiana" by Food & Wine, so their hard work is paying off!
Tinker Coffee was founded in 2014 and roasts coffee for a sweet group of restaurants, cafes, offices, and markets. Jeff admits to preferring Colombian coffees, and Steve, Kenyas.
