Coffee Description
As far as coffee processing goes, Darabiel is just as dedicated to creating delicious coffee as he is with his farming. Hand-picked cherries are inspected for quality using the float method before being de-pulped. Once the outer fruit layer is removed, the seeds are fermented in barrels for up to 40 hours, washed, then laid out to dry on raised beds in parabolic dryers — plastic-covered structures with a dome shape that captures the greatest amount of solar radiation for more efficient drying.

About Darabiel Osorio of Colombia
Starting the new year off with the return of one of our favorite relationship coffees! Produced by Darabiel Osorio on his 1.5 hectare farm, Finca Pringamosas, this coffee is grown using extensive regenerative agriculture techniques and organic practices in order to preserve the health and viability of his land. Darabiel does not apply pesticides or chemicals on his crops, uses homemade nutrient-rich compost, and has even implemented the use of groundcover plants to help protect his soil from drought and erosion. He also has a water filtration system to remove harmful levels of nitrogen and phosphorus from his farm’s wastewater.

Dapper & Wise
In 2013, Insomnia's owners Evan Aldrete and Tyler Geel launched Dapper & Wise as a tasting room and roasting facility in Portland's Western suburbs, and by 2014, as a wholesaler as well.
Based out of Hillsboro, Oregon, Evan and Tyler work with a stellar team, all of whom are dedicated to the values that undergird Dapper & Wise: “We want people to walk through our doors and feel welcome.
