Coffee Description
Washed coffees are delivered milled to the decaffeination plant where they are first steamed to remove silver skin before being moistened to open the pores of the seeds. The seeds are then submerged in a sugarcane derived ethyl acetate solution which strips the caffeine into the solution. It is then steamed again to remove the ethyl acetate. As the coffee is still wet, it is then dried again to achieve below 12% moisture before being prepped for export.

About Various smallholders of Colombia
Named after the Spanish word for fresh-pressed sugarcane juice, this sweet and balanced decaf coffee is a collection of smallholder lots curated by the Monkaaba group, a producer-led training and support organization based in San Augustin. Led by Esnaider Ortega Gomez and several other prominent local producers, Monkaaba aims to empower smallholder farmers in southern Huila by hosting educational cupping sessions, where growers learn how their coffee is evaluated, and providing them access to specialty markets allowing them to sell their lots for higher prices.

In 2013, Insomnia's owners Evan Aldrete and Tyler Geel launched Dapper & Wise as a tasting room and roasting facility in Portland's Western suburbs, and by 2014, as a wholesaler as well.
Based out of Hillsboro, Oregon, Evan and Tyler work with a stellar team, all of whom are dedicated to the values that undergird Dapper & Wise: “We want people to walk through our doors and feel welcome.
