Coffee Description
This coffee was fermented in open tanks, allowing natural oxidation to take place while still in full cherry form. Next, the cherries are pulped to remove the outer fruit layer and the newly released seeds undergo a second fermentation. The seeds are then washed and laid out to dry in two stages: first on raised canopies designed by Benjamin, then onto patios to finish drying before moving to the dry mill.

As a third-generation coffee farmer, Benjamin grew up learning how to traditionally cultivate and care for numerous coffee varieties while also developing new techniques to modernize his own farm, El Aguacate.

In 2013, Insomnia's owners Evan Aldrete and Tyler Geel launched Dapper & Wise as a tasting room and roasting facility in Portland's Western suburbs, and by 2014, as a wholesaler as well.
