About Luis “Wicho” Valdez Jr. of Guatemala
Finca San Isabel was granted to the Valdés family in 1875 by the president of Guatemala. These 300 acres passed to a third party for a period, but in 1960, Luis Valdés II, great-grandson of the original owner, bought it back and planted coffee on its fertile slopes. These days, Don Luis’ son, Luis III, “Wicho,” manages the farm, and his young son, Luis IV, follows him around much as Wicho used to follow Don Luis, learning coffee from the get-go.
Wicho's family employs around 50 full time workers who are joined by 450 more during harvest season. Improved cultivation practices, on-site processing, and meticulous drying methods have earned Wincho awards in Cup of Excellence competitions, and the fair wages they offer have created a loyal workforce that returns every year to be part of their harvest. With his background in agronomy, Wicho has implemented a targeted pruning practice that is helping battle leaf rust (Roya) without chemicals.

Dapper & Wise
In 2013, Insomnia's owners Evan Aldrete and Tyler Geel launched Dapper & Wise as a tasting room and roasting facility in Portland's Western suburbs, and by 2014, as a wholesaler as well.
Based out of Hillsboro, Oregon, Evan and Tyler work with a stellar team, all of whom are dedicated to the values that undergird Dapper & Wise: “We want people to walk through our doors and feel welcome. We want people to taste our coffee and be impressed and inspired. We want the coffee we roast to exemplify the hard work of the producers that grow it.”
