Coffee Description
If nostalgia had a fragrance, this celebration of vanilla, malt, and chocolate aromas would be it. In the cup, dive headfirst into flavors of raisin, chocolate cake, and butterscotch. Silky, full-bodied, with a creamy, cashew-butter blanket of flavor, sweet, mellow acidity pairs with caramel apple and fruit pie in the finish.

About Smallholder producers of Peru
In 2014, 233 smallholder farmers in Peru’s Cajamarca region joined forces to find sustainable markets for their coffees. Thus the Cooperativa Agraria de Servicios Multiples ”Union Y Fe” La Coipa (The Agrarian Cooperative of Multiple Services ‘Union and Faith’ in La Coipa) was born. The name is long, but every word is important to the co-op’s founders. Coffee importer Mercanta says, “In particular, ‘Union’ (Union) and ‘Fe’ (Faith) demonstrate their belief that collaborative action and perseverance are the keys to achieving a better life for coffee producers and their families.”
Most of the farmers cultivate less than 4 hectares of land each, and working with Union y F gives them access to pre-financing, technical know-how, and programs for coffee quality improvement as well as social programs. Members process their day lots at their individual wet mills, and since 2016, are required to use solar dryers to ensure quality and retain the reputation they have built together for quality coffee.

Dapper & Wise
In 2013, Insomnia's owners Evan Aldrete and Tyler Geel launched Dapper & Wise as a tasting room and roasting facility in Portland's Western suburbs, and by 2014, as a wholesaler as well.
Based out of Hillsboro, Oregon, Evan and Tyler work with a stellar team, all of whom are dedicated to the values that undergird Dapper & Wise: “We want people to walk through our doors and feel welcome. We want people to taste our coffee and be impressed and inspired. We want the coffee we roast to exemplify the hard work of the producers that grow it.”
