Coffee Description
Sebastian Ramirez's Geisha White Honey coffee is the result of meticulous craftsmanship. The cherries are handpicked and painstakingly sorted to ensure that 95% are perfectly ripe while 5% remain semi-ripe, creating a symphony of flavors.
These cherries then undergo a unique anaerobic fermentation process in 200-liter tanks. At a constant temperature of 18°C, CO2 is injected while the cherries are submerged in water with an oxygen pump for 48 hours, enhancing their complexity.
After this transformational fermentation, the beans embark on a two-phase drying process, lasting 25 days. This delicate drying process is carefully controlled and slowed down using shade netting, allowing the beans to develop a harmonious flavor profile. Finally, the coffee is lovingly packaged in Grain-Pro bags and stabilized for 15 days.
The result? An exquisite cup that promises to transport you to a world of flavors.
