Coffee Description
This is our seventh year purchasing from the Prentice family, and we are excited to present this year's lot. Called La Nube and developed for us by blending individual day harvests, it consists of cherries harvested from their Pacas trees, then fermented in water for 24+ hours before washing and sun drying, and finally blended from several day lots to achieve a lovely flavor profile of gala apple and orange, toffee, ganache, and praline.

About Ellen Prentice of Guatemala
Finca de Dios is managed by Ellen Prentice and her husband and daughter. Ellen is an Agricultural Engineer who meticulously nurtures the farm. She ensures that only the ripest cherries get selected and that all post-harversting processes are to the highest standards. The most prevalent varieties in the 27 hectare farm are Caturra, Bourbon, Catuai, Pacas, and Pache, which are all processed in the farms mill and sun dried on patios or raised beds.

Penstock Coffee Roasters
We source as much of our coffee as direct as possible. Currently, farm direct coffee accounts for all our Central and most of our South American coffees or about 85% of the coffee we roast. Direct for us means we select the lot and we determine the price, quantity, and quality of the lot directly with the farm or mill owner. For the other 15%, we rely on certified coffee (Organic, Fair Trade, Bird Friendly, Rainforest Alliance, etc.) which guarantees a minimum wage and minimum sustainability, or we purchase stellar cupping lots, i.e., game changing coffee in terms of taste, from mills who are innovative in processing, or from growers whom we intend or hope to purchase directly.
