We are offering this bundle as a chance to get to taste the wide range of flavors coming from the Yunnan region. This is PERC's first year souring coffee from China. And they were blown away by the cup table so we had to bring two coffees to the line up!

Compare both - one is an Experimental Anaerobic process and the other is a Natural process.
Cupping them next to each other will make the flavor differences very discernible, thus making this experience wonderful for palate training.

About Loa Xu Zhai Village + Torch Coffee of China

Yunnan Black Sheep

Yunnan Black Sheep is an experimental double anaerobic natural process coffee. The process includes a 30-day anaerobic ferment, an initial drying to 35% moisture, an additional 20-day ferment, and a final drying of 10-12% moisture. The result is a coffee with massive flavor. The cup starts with a blackberry acidity, funky berry notes, and a thick, dark chocolate finish.

Lao Xu Zhai Village

Lao Xu Zhai Village is a naturally processed Catimor coffee from Yunnan, China. Lao Xu Zhai is a new processing station that is experimenting with plant nutrition, processing, and harvesting. The quality and unique cup profile blew us away. The coffee is super sweet with plum and cherry acidity, baking spice and chocolate flavors, and a hint of licorice in the finish.
