About Smallholder producers of Ethiopia
This coffee hails from near the village of Worka in the remote West Arsi zone, snugged between the more well-known Sidama and Harrar zones. After tasting different screen sizes, processor Girma Wondimu and Catalyst Coffee Consulting out of Portland, OR found that smaller sized beans featured flavor notes of lemon zest, fresh raspberries, and lemonade, while the larger ones presented peaches, nectarines, cascara, and lemon balm.
Why choose one profile or the other? Together, Catalyst, Girma and his workers cleaned machinery, calibrated for screen sizes 13-17, and three types of sorting: gravimetric, optic, and by hand. Normally conveyor belts used for hand sorting stop every 30 seconds. For this special prep lot, each stop was given 6 minutes, and the trained sorters received a daily bonus of 110 birr in addition to their day’s wage of 35 birr.

As a company, we take pride in directly importing 90% of our coffees from dedicated growers in Central America, while the remaining 10% is sourced through our valued partner, CATALYST CONSULTING, who provides us with exceptional Ethiopian coffees.
