Coffee Description

Delicate, intricately sweet, vibrant and impeccably balanced. Rose, crisp fruit (green apple, Bing cherry, wild strawberry), honey, tangerine zest, dragonwell green tea, fresh juniper in aroma and cup. The structure is incredibly sweet and juicy, yet zesty and richly tart. Light, but very silky mouthfeel. Flavor consolidates in the finish with a delicately crisp, sweet resonance.

Washed Process

During washed process, coffee harvested is taken to a receiving tank where water is pumped in order to push it down a funnel. “Floaters” – unripe cherries that float on the surface – are discarded.

After passing through the receiving tank and having floaters removed, the remaining cherries have their surrounding cherry skin and pulp mechanically separated by a machine.

The skin and pulp is collected to be used as fertilizer for the farms and pastures. The coffee is now comprised of the bean, surrounded by a layer of parchment (or pergamino), and covered in a sticky mucilage. Coffees then go to a mechanical demucilager to have their mucilage scrubbed off.

By this point in the processing, accounting for all the different microlots that must pass through each stage, it may be as late as 2AM. The coffee sits wet in another set of holding tanks, ready to be put to dry in the morning.

The Jaramillo Farm

The air up in Jaramillo is a high up in the mountains kind of wet and cold, surprisingly perfect for making the aromatics of the Geisha variety sing. Though Geisha variety coffees had been planted fitfully all over the area, it was a lot separated out from one small region on this farm that first jumped out at the cuppers who tasted Geisha in 2004.

The farm jumps up from rolling hills on its lower part to steep 40 degree inclines higher up, making harvesting a manual and challenging affair. There had been coffee planted on the lower parts of the farm – as many as 15 different sub-varieties, little hybrids out of Costa Rica and Brazil, and in 1997 the Peterson family decided to plant higher up.

It is these high altitudes that really make the Geisha’s bright, floral aromatics express themselves. With cooler temperatures and massive shade trees that have been standing for ages, it turns out that Jaramillo is the perfect place for this variety to have landed. To this day many of our top performing microlots of Geisha coffee come from little patches on the slopes of Jaramillo.
