Crop Top, the counter part to our cold weather seasonal blend Sweater Weather, is designed for the warm days ahead. Fresh spring vibes and long sweltering summer afternoons. This light-to-medium roasted blend of washed, natural, and honey processed coffees creates a vibrant yet well-balanced brew bursting with juicy acidity and fruity sweetness. A nice melange of nut, fruit, and spice notes reminds us of sangria at the seson's first garden party. Enjoy this coffee as full flavored filter brew, or extract it cold for a crisp and refreshing cold brew. While you're at it, grab an old pair of acid wash jeans, your older brother's Metallica t-shirt, a pair of scissors, and get to cutting. Let it all hang out!

About Emilio Lopez Diaz of El Salvador
Emilio Lopez Diaz is a 6th generation coffee producer, who tends to his family's two farms, Fincas Ayutepeque, and El Manzano. Both Emilio and his coffees have made quite the name for themselves in the Specialty coffee industry. Emilio served as Chair of the Coffee Roasters Guild Executive Council from 2017-2018, the only coffee producer to ever serve on the council.
His coffees have gone on to win many awards and have been used by several national and world Barista and Roaster Champions. In 2018, he took both 1st and 2nd place in El Salvador Cup of Excellence. He runs one of he most state of the art mills in world, where he pushes the envelope in experimenting and standardizing processing techniques that offer both efficiency and tailored flavor profiles.

Not many roasting companies start out on the flanks of a volcano, but that’s exactly what happened in 2002 when Topeca launched on the family farms on the Santa Ana volcano in El Salvador (one of which has been in the family since 1850). And like many, it also started in a garage with little money and the youthful hope that they could build something with nothing and leave the world a better place than they found it.
With perseverance and a passion for excellence, they’re doing just that. They’ve gathered an award-winning team, and every stage of the operation at Topeca, from farm operations, processing, and milling to roasting and brewing reveals their passion for truly great coffee.
